The total number of food poisoning incidents in Japan (considered as one of the cleanest countries in the world) has remained almost unchanged since late 1960’s despite the significant improvement of environmental sanitation.
More than 90% of food poisoning whose causes are identified are caused by bacteria and viruses.

Infections caused by such bacteria as Staphylococcus aureus, salmonella, Escherichia coli O-157, which occur usually in summer, are well-known, but recently viral infections like norovirus are raging in various regions in and out of season.

More attention is now paid to the fact that viral infections are likely to spread more widely due to the diversification of the transmission routes of viral infection: they spread not only through food (conventional food poisoning) but also through airborne droplets or dried droplets of vomit or excrement of infectious patients. Infection control against infections caused by such bacteria and viruses becomes a central issue in not only the kitchens of restaurants and hotels but also in health care facilities and welfare facilities for the aged. With a high level of safety, strongly acidic “DENKAISUI” electrolyzed water has a superior sterilizing power to kill bacteria such as Staphylococcus aureus, salmonella, Escherichia coli O-157 instantly (within 5 seconds).
It also has high antiviral properties and is effective for a small non-enveloped virus that is considered resistant to physical and chemical treatment including disinfectant agents.

As shown in the graph on the right, the strongly acidic “DENKAISUI” electrolyzed water is proven to inactivate (within 120 seconds) feline calicivirus, a surrogate of norovirus.

  • Washing effect of strongly alkaline “DENKAISUI” electrolyzed water
Strongly alkaline “DENKAISUI” electrolyzed water has a strong cleaning power on protein and oil strains (stripping performance and solvent action) and washes out stains quickly.

The use of the strongly alkaline “DENKAISUI” electrolyzed water prior to the sterilization by the strongly acidic “DENKAISUI” electrolyzed water will provide a high level of hygiene control.

  • Prevent food poisoning by using “DENKAISUI” electrolyzed water

The three principles for food poisoning prevention are (1) not to have, (2) not to increase, and (3) to kill the food poisoning bacteria. In this context, the strongly acidic “DENKAISUI” electrolyzed water is highly effective in killing bacteria.

  • Hand hygiene
    Hand washing is the most basic and effective measure to prevent food poisoning.
    Washing hands with running electrolyzed water of the strongly acidic “DENKAISUI” for more than 30 seconds is effective for infection prevention. Washing hands with the strongly acidic “DENKAISUI” electrolyzed water after washing by soap or the strongly alkaline “DEANKAISUI” electrolyzed water will enhance the preventive effect further.
  • Washing food and food ingredients (vegetables, fruits, fish and seafood etc.)
    Strongly acidic “DENKAISUI” electrolyzed water
    Strongly acidic “DENKAISUI” electrolyzed water is designated as a food additive. It can be applied directly to vegetables, fruits, fish and seafood, etc. to sterilize them. Washing them with running electrolyzed water of the strongly acidic “DENKAISUI” for one to two minutes is effective for infection prevention. Strongly acidic “DENKAISUI” electrolyzed water has a low environmental persistency and its odor does not last long unlike other detergents or disinfectants.
  • Washing and sterilizing dishes and cooking equipment (cutting board, kitchen knife, etc.)
  • Washing the floor and wall of the workplace

Washing kitchen utensils such as cutting board and kitchen knife with running water is effective for food hygiene. Spray or splash strongly acidic “DENKAISUI” electrolyzed water on the floor of the bathroom or the workplace and after leaving it as it is for 2 to 3 minutes, wipe the water off on the floor in one direction. To enhance the effect further, remove dirt and dust on the floor with strongly alkaline “DEANKAISUI” electrolyzed water beforehand.
